New Chefs at Ganton Senior Communities Bring Nutritional, Quality, Chef Inspired Creations to Residents

June 9, 2017, Battle Creek, MIGanton Senior Communities (GSC) is pleased to announce Eric Bird, Matt Hinga and Scott Spaudling as head chefs at Lakeview Assisted Living, Heritage Assisted Living and Reflections Memory Care.

Eric Bird joined GSC in May 2017 and is the chef at Lakeview Assisted Living. He has over 25 years of experience in the culinary industry and was trained at Le Cordon Bleu in Scottsdale, Arizona. Eric spent a year during his externship working as a line cook at the Grand Hotel on Mackinaw Island. “My love for culinary is based in culture and history – how people, around the world, sustain life is very fascinating to me,” mentions Eric. “Working at GSC enables me to get to know residents, hear their stories, their history and culture and how this shapes their experiences – this only continues to fuel my passion.”

 

Matt Hinga joined GSC in December 2016 and is the chef at Heritage Assisted Living. He has close to ten years of experience in the culinary industry. Matt previously served as the chef at Olde Peninsula Brew Pub in Kalamazoo and prior, worked as the sous chef at Epic Bistro in Kalamazoo and at Schuler’s in Marshall. “I truly love everything culinary – from the sounds and smell of food preparation, the patience needed to properly cut and assemble ingredients to the final presentation,” mentions Matt. “Most of all, I love the reaction from residents! Being able to affect their nutritional needs in a new way enables our residents have the highest quality of life through nutrition.”

 

Scott Spaulding joined GSC in April 2017 and is the chef at Reflections Memory Care. He has over 15 years of experience in the culinary industry. Scott previously served as the sous chef at a German restaurant in North Carolina and after relocating to Michigan; he was the chef at a senior living community. “I thrive in an environment where I can utilize my creativity to develop new and interesting recipes – an environment presented Reflections provides this environment,” mentions Scott. “I enjoy cooking meals that offer a feeling of home and serving as the chef at Reflections, I am able to add to the overall comfort and happiness of our residents.”

 

With the addition of Eric, Matt and Scott, our hospitality focus at GSC continues to evolve. Mealtime is an important experience for our residents, and we strive to provide a dining experience that everyone can take pride in. In working towards this achievement, over the past few months, GSC was working on building a new service model for our dining services.


The new service model is to provide an experience one would expect to receive at a restaurant, approaching each resident through a customer-service approach and meeting the resident’s needs one-on-one.

 

“The dining experience, from dining room esthetics to resident focused service and food quality, selection and presentation are very important qualities in our new hospitality approach,” mentions Zach Ganton, Assistant Campus Administrator and Hospitality team manager. “With the addition of Eric, Matt and Scott, our residents are in very capable hands to receive top notch service with a focus on a nutritional and quality mealtime experience.”
